Chicken Biryani recipe

 Here’s a delicious and aromatic Chicken Biryani recipe that serves 4-6 people. You can adjust the spice levels based on your preferences.



  Ingredients:

For the Rice:

      • 2 cups basmati rice
      • 1 bay leaf
      • 4-5 cloves
      • 2-3 green cardamom pods
      • 1-inch cinnamon stick
      • Salt to taste
      • Water (for boiling)
For the Chicken Marinade:
      • 500g chicken (bone-in or boneless, cut into pieces)
      • 1 cup plain yogurt
      • 1 tablespoon ginger-garlic paste
      • 1 teaspoon turmeric powder
      • 1 tablespoon red chili powder
      • 1 tablespoon garam masala
      • Salt to taste
      • 1 tablespoon lemon juice
For the Biryani Masala:
      • 2 tablespoons vegetable oil/ghee
      • 2 large onions, thinly sliced
      • 2 tomatoes, chopped
      • 1 tablespoon ginger-garlic paste
      • 2-3 green chilies (optional, for heat)
      • 1 teaspoon cumin seeds
      • 1 teaspoon coriander powder
      • 1 teaspoon garam masala
      • 1/2 teaspoon turmeric powder
      • A handful of fresh coriander leaves, chopped
      • A handful of fresh mint leaves, chopped
      • 1/4 cup milk (optional, for soaking saffron)
      • A pinch of saffron (optional)
      • Fried onions for garnish (optional)
      • 1 tablespoon kewra water or rose water (optional)
      • 2 boiled eggs (optional)
Instructions:

1. Prepare the Rice:
      • Wash the rice under cold water until the water runs clear, then soak it for 30 minutes.
      • Boil water in a large pot, add the whole spices (bay leaf, cloves, cardamom, cinnamon), and salt.
      • Add the soaked rice and cook until 70% done (the rice should still be firm as it will cook further with the chicken). Drain and set aside.
2. Marinate the Chicken:
      • In a bowl, mix yogurt, ginger-garlic paste, turmeric, chili powder, garam masala, lemon juice, and salt.
      • Add chicken pieces to the marinade and coat well. Let it marinate for at least 30 minutes (or longer for deeper flavor).
3. Cook the Chicken:
      • Heat oil or ghee in a heavy-bottomed pot. Add sliced onions and fry until golden brown.
      • Add cumin seeds and let them crackle. Then add ginger-garlic paste and green chilies, and sauté for 2-3 minutes.
      • Add chopped tomatoes and cook until they soften.
      • Add the marinated chicken, coriander powder, turmeric, garam masala, salt to taste, and fresh coriander and mint leaves. Cook until the chicken is 80% done and the oil separates from the masala.
4. Layering the Biryani:
      • In the same pot, spread a layer of half-cooked chicken at the bottom.
      • Spread half of the semi-cooked rice over the chicken.
      • Sprinkle fried onions, saffron milk (if using), kewra/rose water, and a handful of chopped mint and coriander.
      • Repeat the layers with the remaining chicken and rice. Top with fried onions, saffron milk, and more mint and coriander leaves.
5. Dum Cooking (Steaming):
      • Cover the pot with a tight-fitting lid or seal with dough to ensure no steam escapes.
      • Cook on low heat for 20-30 minutes to allow the flavors to meld and the rice to fully cook. (You can also use a tawa/skillet under the pot to prevent direct heat).
6. Serving:
      • Once done, gently fluff the biryani with a fork to mix the layers.
      • Garnish with fried onions and boiled eggs (optional).
      • Serve hot with raita, salan (spicy gravy), or a simple cucumber salad.
