Mutton Curry

      Here's a delicious recipe for Mutton Curry with rich flavors and tender meat



                                                 Ingredients

- 500g mutton (goat or lamb)

- 2 large onions, finely chopped

- 2 tomatoes, finely chopped

- 3-4 cloves garlic, minced

- 1-inch piece of ginger, minced

- 2-3 green chilies, slit

- 1 cup yogurt (curd)

- 2 tbsp cooking oil (vegetable, mustard, or ghee)

- 1 tsp cumin seeds

- 2-3 bay leaves

- 1 cinnamon stick

- 4-5 cloves

- 4-5 black peppercorns

- 2-3 cardamom pods

- 1 tsp turmeric powder

- 1 ½ tsp red chili powder (adjust to taste)

- 1 tsp coriander powder

- 1 tsp cumin powder

- 1 tsp garam masala powder

- 1 tsp meat masala (optional)

- Fresh coriander leaves for garnish

- Salt to taste

- Water as needed


        Instructions:


1. Marinate the Mutton

   - In a bowl, mix mutton with yogurt, turmeric powder, red chili powder, salt, and half of the minced ginger and garlic. Let it marinate for at least 1-2 hours (preferably overnight for better flavor).


2. Cook the Curry Base

   - Heat oil in a heavy-bottomed pan or pressure cooker. Add cumin seeds, bay leaves, cinnamon stick, cloves, cardamom pods, and black peppercorns. Fry for a minute until fragrant.

   - Add chopped onions and green chilies. Sauté until onions turn golden brown.

   - Add the remaining ginger and garlic. Cook for 2-3 minutes until the raw smell disappears.

   - Add chopped tomatoes and cook until they soften and release oil.


3. Add Spices

   - Add coriander powder, cumin powder, red chili powder, and salt. Mix well and cook for a few minutes until the spices are well incorporated into the tomato-onion mixture.


4.Cook the Mutton

   - Add the marinated mutton to the pan. Sear the meat on high heat for 5-7 minutes until it turns slightly brown.

   - If using a pressure cooker, add about 1 cup of water, cover, and cook on medium heat for about 4-5 whistles (or until the meat is tender). If using a regular pot, add 2 cups of water and simmer for 45 minutes to 1 hour, stirring occasionally until the mutton is cooked and tender.


5.Finish the Curry

   - Once the mutton is cooked, add garam masala powder and meat masala (if using). Stir well and let it simmer for another 5 minutes.

   - Adjust salt and spice levels if needed. You can add more water if you want a thinner gravy.


6.Garnish and Serve

   - Garnish with fresh coriander leaves.

   - Serve hot with steamed rice, naan, or roti.
