For the Rice
- 2 cups basmati rice, soaked for 30 minutes and drained
4 cups water
1 bay leaf
- 4-5 whole cloves
- 2-3 green cardamom pods
- 1 cinnamon stick
- Salt to taste
For the Chicken
- 1 kg chicken, cut into pieces
- 1 cup yogurt
- 1 tablespoon ginger-garlic paste
- 1 teaspoon red chili powder
- 1/2 teaspoon turmeric powder
- Salt to taste
For the Biryani
- 3 tablespoons ghee or oil
- 2 large onions, thinly slice
- 2 tomatoes, chopped
- 1/2 cup chopped mint leaves
- 1/2 cup chopped cilantro (coriander leaves)
- 1/2 cup fried onions (for garnish)
- 1/2 cup warm milk
- A pinch of saffron strands (soaked in warm milk)
- Ghee for greasing
Instructions
1.Prepare the Rice
- In a large pot, bring water to boil.
- Add soaked and drained basmati rice along with bay leaf, cloves, cardamom pods, cinnamon stick, and salt.
- Cook until the rice is 70-80% done. Drain and set aside.
Marinate the Chicken
- In a bowl, mix chicken pieces with yogurt, ginger-garlic paste, red chili powder, turmeric powder, and salt. Let it marinate for at least 30 minutes.
Cook the Chicken
- Heat ghee or oil in a pan. Add sliced onions and sauté until golden brown.
- Add marinated chicken and cook until it's partially cooked.
- Add chopped tomatoes, mint leaves, and cilantro. Cook until the chicken is tender and the masala is well-cooked.
.Layering the Biryani
- In a large, heavy-bottomed pot, spread a layer of partially cooked rice.
- Add a layer of the cooked chicken masala.
- Repeat the layers, finishing with a layer of rice on top.
Garnish and Dum Cooking
- Drizzle warm milk with saffron strands over the top layer of rice.
- Sprinkle fried onions and a bit of chopped mint and cilantro.
- Cover the pot with a tight-fitting lid. Cook on low heat (dum) for 20-25 minutes to allow the flavors to meld and the rice to fully cook.
Serve
- Gently fluff the biryani with a fork, mixing the layers.
- Serve hot with raita or a side salad.
