Ingredients

- 2 cups rice

- 4 cups water

- 1 teaspoon salt

- 2 tablespoons vegetable oil

- 1 onion, finely chopped

- 2 cloves garlic, minced

- 1 cup mixed vegetables (carrots, peas, corn, etc.)

- 2 eggs, beaten

- Soy sauce to taste


Instructions

 Rinse the rice under cold water until the water runs clear.

In a pot, combine the rice, water, and salt. Bring to a boil, then reduce heat, cover, and simmer until the rice is cooked and water is absorbed.

In a large skillet or wok, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, sauté until fragrant.

 Add the mixed vegetables to the skillet and stir-fry until they are tender-crisp.

 Push the vegetables to one side of the skillet and pour the beaten eggs into the empty side. Scramble the eggs until cooked.

Mix the cooked eggs with the vegetables, then add the cooked rice to the skillet. Stir everything together.

Season with soy sauce to taste, and continue to stir-fry until everything is well combined and heated through.
