Ingredients
For the Broth:
- 1 whole chicken (about 3-4 lbs), washed and giblets removed

Instructions
1 Char the Onion and Ginger
- Preheat the oven broiler. Place the onion and ginger on a baking sheet and char under the broiler for about 15-20 minutes, turning occasionally. This enhances the flavor of the broth.
2. Prepare the Chicken
- In a large pot, bring water to a boil. Add the whole chicken and boil for 10 minutes to remove impurities. Discard the water and rinse the chicken.
3.Simmer the Broth
- Fill the pot with about 4 quarts of water. Add the chicken, charred onion, charred ginger, star anise, cloves, cinnamon stick, cardamom pods, coriander seeds, salt, fish sauce, and sugar. Bring to a boil, then reduce the heat to simmer. Skim off any foam that rises to the surface.
