Pho - soup (Vietnam)

Pho is a beloved Vietnamese noodle soup known for its aromatic broth and flavorful toppings. Here's a basic recipe for making Chicken Pho (Pho Ga). Feel free to customize it with your favorite herbs and condiments.

Ingredients

For the Broth:

- 1 whole chicken (about 3-4 lbs), washed and giblets removed

- 1 large onion, halved and unpeeled

- 1 4-inch piece of ginger, sliced

- 4-5 star anise

- 3-4 cloves

- 1 cinnamon stick

- 2 cardamom pods

- 1 tablespoon coriander seeds

- 1 tablespoon salt

- 1-2 tablespoons fish sauce

- 1 tablespoon sugar

For the Bowls

- Flat rice noodles (banh pho), prepared according to package instructions

- Cooked chicken, shredded

- Fresh herbs: cilantro, basil, mint

- Bean sprouts

- Lime wedges

- Thinly sliced chili peppers (optional)

Instructions

1 Char the Onion and Ginger

   - Preheat the oven broiler. Place the onion and ginger on a baking sheet and char under the broiler for about 15-20 minutes, turning occasionally. This enhances the flavor of the broth.

2. Prepare the Chicken

   - In a large pot, bring water to a boil. Add the whole chicken and boil for 10 minutes to remove impurities. Discard the water and rinse the chicken.

3.Simmer the Broth

   - Fill the pot with about 4 quarts of water. Add the chicken, charred onion, charred ginger, star anise, cloves, cinnamon stick, cardamom pods, coriander seeds, salt, fish sauce, and sugar. Bring to a boil, then reduce the heat to simmer. Skim off any foam that rises to the surface.

4.Simmer Chicken

   - Simmer the chicken for about 1-1.5 hours until it's cooked through and the flavors are infused into the broth.

5.Remove Chicken and Strain Broth

   - Remove the chicken from the pot. Shred the meat and set it aside. Strain the broth through a fine mesh strainer to remove solids.

6.Season the Broth

   - Adjust the seasoning of the broth with fish sauce, salt, and sugar to taste.

7.Prepare Toppings

   - Cook the rice noodles according to package instructions. Prepare the fresh herbs, bean sprouts, lime wedges, and sliced chili peppers.

8.Assemble Bowls

   - Place a handful of rice noodles in each bowl. Top with shredded chicken and ladle the hot broth over the noodles and chicken.

9.Serve

   - Serve immediately, allowing each person to customize their bowl with fresh herbs, bean sprouts, lime wedges, and chili peppers.

Enjoy your homemade Chicken Pho, a Vietnamese classic that's both comforting and full of flavor!
