 Ingredients:

- 2 lbs pork shoulder, cut into cubes

- 2 tablespoons olive oil

- 1 onion, chopped

- 3 cloves garlic, minced

- 2 carrots, peeled and sliced

- 2 celery stalks, chopped

- 2 potatoes, peeled and cubed

- 1 can (14 oz) diced tomatoes

- 2 cups chicken or vegetable broth

- 1 teaspoon paprika

- 1 teaspoon dried thyme

- Salt and pepper to taste

- Chopped fresh parsley for garnish (optional)


Instructions:

1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the pork cubes and brown them on all sides. Remove the pork from the pot and set it aside.

2. In the same pot, add the chopped onions and cook until they're translucent. Add the minced garlic and cook for another minute.

3. Put the browned pork back into the pot. Add the carrots, celery, potatoes, diced tomatoes (with their juices), and broth. Stir everything together.

4. Season the stew with paprika, dried thyme, salt, and pepper. Stir well to combine.

5. Bring the stew to a boil, then reduce the heat to low. Cover the pot and let it simmer for 1.5 to 2 hours, stirring occasionally, until the pork is tender.

6. Once the pork is tender and the vegetables are cooked through, taste and adjust seasoning if needed.

7. Serve the pork stew hot, garnished with chopped fresh parsley if desired.
